Sesame chicken noodles Photo

Ingredients - 

180 g dried wheat noodles
1 poached chicken breast (

shredded

)
0.5 cucumbers (

julienned

)
2 spring onions (

finely sliced

)

sauce

1.5 tbsp sesame paste
1 tsp peanut butter
1.5 tbsp soy sauce
1 tbsp rice vinegar
2 tsp sugar
1 tsp chilli oil (add more to taste)
1 tsp sesame oil

Instructions

Mix all of the sauce ingredients together with a dash of hot water to help the sesame paste break down.

Boil the noodles as per package instructions. When cooked, drain and rinse with cold water to wash off the starch and prevent further cooking.

Mix 1/3 of the sauce with the shredded chicken. Then arrange the rest of the sauce into each bowl.

Assemble each serving by adding the cold noodles on top of the sauce, then the chicken, cucumber and finally spring onion.

Mix well and enjoy!
