Easy roasty one
Tarragon chicken Photo

Ingredients - 

1 whole medium chicken
5 cloves garlic (

crushed

)
150 ml double cream
1 bunch tarragon (

roughly chopped

)
1 tbsp dijon mustard
100 ml white wine (Optional)

Instructions

Spatchcock your chicken and salt on both sides.

Crush up the garlic and drizzle olive oil - into the oven for 20 minutes at 200C until the chicken browns.

Mix up the cream, mustard and tarragon in a bowl and generously pour over the chicken, make sure to get good coverage. Pour the wine around the chicken and back in the oven for 30 mins ish.

Serve with mash or roasted potatoes & some veg.
