Bulgarian sausage and bean stew Photo

Ingredients -

 bulgarian sausages (

diagonal slices

g butter beans (

 large onion(s) (

 large carrot(s) (

 large bell pepper (

 cloves garlic (

 bay leaves

g chopped tomatoes

 bunch fresh parsley

Instructions

Cook off the onions, celery, carrot and peppers for 5ish minutes until soft. Season with salt and pepper.

Then add your garlic and paprika and cook for a couple of minutes until fragrant.

Time for the Bulgarian sausages! Make some room on the bottom of the pot and fry them off until browned and some of the fat renders.

Next add the chopped tomatoes, butter beans and enough water so everything is covered.

Finally add the bay leaves & thyme and simmer on a low heat with the lid on for 30 mins. Pro tip: mash up a few butter beans in the sauce to thicken!

Stir through some chopped parsley & serve with crusty bread, some yoghurt & a sprinkling of fresh parsley.
