 can butter beans (

drained and rinsed

 tbsp tomato paste

 tsp cinnamon

 tbsp red wine vinegar

 can chopped tomatoes

Instructions

In a big pot, cook off the onions for 5 minutes then add the garlic and cook until softened.

Add the tomato paste and cook for 1 minute. Then add the beans, chopped tomatoes, cinnamon, oregano, and 250ml boiling water.

Bring to a boil and simmer on the hob for 25 minutes or until thickened. Or cook in the oven for 25-35 minutes instead of boiling.

Salad: While the beans are cooking, chop up the cucumber, tomatoes, parsely & kalamata olives. Mix together and add the red wine vinegar, lemon juice, olive oil and oregano. Serve with some carbs like couscous or sourdough bread.
