Healthy & very tasty. Add chorizo for non veggie version.
Ingredients -
Salad
1 handful fresh parsley (
roughly chopped

1 tbsp red wine vinegar
3 salad tomatoes (
large - roughly chopped
)
0.5 cucumber(s) (
roughly chopped
)
1 handful kalamata olives (
cut into halves
)
1 handful mint leaves (
roughly chopped
)
1 tbsp olive oil
1 pinch oregano (
dried
)
0.5 lemon(s)
Beans
2 can butter beans (
drained and rinsed
)
125 g feta (
crumbled
)
1 tbsp tomato paste
1 tsp cinnamon
1.5 tsp oregano (
dried
)
3 cloves garlic (
finely chopped
)
1 onion (
finely chopped
)
1 tbsp red wine vinegar
2 can chopped tomatoes
Instructions

In a big pot, cook off the onions for 5 minutes then add the garlic and cook until softened.

Add the tomato paste and cook for 1 minute. Then add the beans, chopped tomatoes, cinnamon, oregano, and 250ml boiling water.

Bring to a boil and simmer on the hob for 25 minutes or until thickened. Or cook in the oven for 25-35 minutes instead of boiling.

Salad: While the beans are cooking, chop up the cucumber, tomatoes, parsely & kalamata olives. Mix together and add the red wine vinegar, lemon juice, olive oil and oregano.
Serve with some carbs like couscous or sourdough bread.
