Jerk pulled pork Photo

Ingredients - 

marinade

3 cloves garlic
1 lime(s) (

1.5 tbsp brown sugar
0.25 tsp cloves
2 tbsp all spice
1 tbsp jerk seasoning
2 tbsp soy sauce
1 tsp cinnamon
1 scotch bonnet
1 knob ginger
1 tsp nutmeg
0.5 onion(s)

pork

2 bay leaves
1 kg pork shoulder (

boneless

)
200 ml stock (

chicken

Instructions

Cut the pork into two chunks and add some small cuts on the outside.

Blend all of the marinade ingredients until a smooth paste is formed. Marinade the pork overnight in this mixture (3 hours minimum).

Add the pork and marinade mixture to a dutch oven and a roughly chopped onion and the chicken stock. Cook in the oven at 150 degrees (fan) for 2.5 hours until the pork is very tender and can be pulled apart.
