Pad krapow but using tofu instead of pork mince. Please adjust the ingredients according to your liking!

Ingredients -

 tbsp dark soy sauce
400
g extra firm tofu

 cloves garlic

 servings jasmine rice

 bunch thai basil

 egg(s)

 birds eye chillis

 shallots

g tenderstem broccoli

 tsp sugar
1.5
 tbsp oyster sauce
2
 tsp fish sauce
4
cm ginger

Instructions

Crumble the tofu into small mince like pieces and fry in a pan with some oil until some of the moisture has evaporated and it's quite crispy. Then remove from the pan.

Finely dice the shallots and mince/grate the garlic and ginger. Then heat up some more oil in a frying pan or wok and start cooking the shallots. Once they become translucent add the ginger and garlic and cook until fragrant.

Add the tofu back in along the broccoli cut into bitesize pieces. Fry for a minute or so.

Add the soy sauce, oyster sauce, fish sauce and sugar and mix until the incorporated into the tofu mixture. Adjust the taste to your liking and continue to cook until the broccoli is tender.

Tear the thai basil leaves from the stalks and stir into the tofu along with thinly sliced birds eye chilli.

Finally assemble with the jasmine rice and a crispy fried egg to serve.
