Crumble the tofu into small mince like pieces and fry in a pan with some oil until some of the moisture has evaporated and it's quite crispy. Then remove from the pan.

Heat up some more oil in a frying pan or wok and start cooking the shallots. Once they become translucent add the ginger and garlic and cook until fragrant.

Add the tofu back in along the broccoli. Fry for a minute or so.

Add the soy sauce, oyster sauce, fish sauce and sugar and mix until they are incorporated into the tofu mixture. Adjust the taste to your liking and continue to cook until the broccoli is tender.

Tear the thai basil leaves from the stalks and stir into the tofu along with the thinly sliced birds eye chillies.

Finally assemble with the jasmine rice and a crispy fried egg to serve.
