Ingredients - 

1 l stock (

chicken/veg

)
1 carrot(s)
2 leek(s)
4 potatoes (

medium

)
50 g parmesan
3 tbs miso
3 cloves garlic
30 ml double cream
1 onion(s)

Instructions

Roughly chop the vegetables and garlic and add to a pot with some butter.

Once the vegetables have started to soften, pour in the stock and simmer until everything is tender.

Blend the mixture to make a thick soup and season with salt and pepper.

Stir or blend in the miso along with a little more butter.

Serve with crusty bread and an optional drizzle of double cream.
